Balsamic vinegar from Modena IPG is a refined, bittersweet condiment made from boiled or concentrated grape must and wine vinegar. This balsamic vinegar enhances the flavor of any dish and undergoes slow acetification, followed by aging in wooden barrels for a minimum of two months, or more than three years for the aged varieties. Acetaia Giuseppe Cremonini uses a unique logo with one to five bunches of grapes to identify the quality of their balsamic vinegar from Modena. This system, developed in collaboration with the University of Modena and Reggio Emilia, provides consumers with clear information about the product characteristics and its ideal use. The density of the vinegar is a crucial factor: the higher the percentage of grape must, the thicker and sweeter the final product.
