Questions about olive oil
Our olive oil comes from Spain, from the province of Jaén, specifically from the Sierra de Segura and Sierra de Cazorla regions. Both areas have a Protected Designation of Origin (DOP), which stands for exceptional quality and authenticity. In addition, the Señoríos de Relleu olive oil comes from the village of Relleu, in the Alicante region, about 10 km from the Mediterranean Sea.

Extra virgin means the olive oil is pure, unprocessed, and has an acidity below 0.8%. This guarantees the highest quality and flavor.
At Casa Gomez, extra virgin means more than just a quality mark. Our olive oil is pressed directly from the finest olives, exclusively by cold pressing and without chemical or industrial processing. This ensures that all the aromas, antioxidants, and healthy fatty acids are preserved.
To earn the name “extra virgin,” the olive oil must:
- Made from 100% mechanically pressed olives (without heat or solvents).
- Having an acidity of no more than 0.8% – a sign of top quality and freshness.
- Have no taste or smell deviations and a perfect balance of bitterness, fruitiness and a light peppery note.
What is the difference with other olive oils?
- Extra virgin → The highest quality, pure and unprocessed. Ideal for dressings, dips, and to finish dishes.
- Virgin olive oil → Slightly higher acidity (up to 2%) and less pronounced flavor. Suitable for cooking, but less aromatic.
- Refined olive oil → Industrially processed, neutral in flavor, and often blended with virgin olive oil. Less healthy and less flavorful.
- Olive oil (without extra virgin label) → Often a mix of refined and virgin olive oil, which reduces its quality and nutritional value.
At Casa Gomez, we believe that olive oil tells a story—from the ancient trees of Jaén and Alicante to the bottle in your kitchen. That's why we sell only genuine extra virgin olive oil, with a guaranteed origin and a flavor that evokes the Spanish sun.

We sell only extra virgin olive oil that is guaranteed to come from specific regions and meets the highest quality standards.
Unlike our olive oil, many olive oils in the supermarket are blends of oils from different countries and regions. This can lead to a less refined flavor and lower quality.
Therefore, when purchasing olive oil at the supermarket, always pay close attention to quality. There's a significant difference between extra virgin, virgin, refined olive oil, and regular olive oil.

Use & Storage
On our website and with our products we state the 'Best before' date (BBD) of our olive oil. This is an advisory date that indicates until when the optimum quality is guaranteed.
Olive oil often remains good after this date, but can slowly deteriorate in quality due to exposure to air, light and temperature. You can tell that olive oil is no longer good when it becomes rancid and develops an unpleasant odor.

Yes, you can cook and bake with extra virgin olive oil. Although all extra virgin olive oils are suitable for baking, we recommend using olive oil from mature olives. This offers a better price-quality ratio for hot preparations.
On our website we clearly indicate in the collection description whether an olive oil is better suited for cooking or ideal for cold preparations.
- Best olive oil for cooking : More affordable and perfect for frying, but also for cold dishes.
- Exclusive extra virgin olive oil for salads and dips : Excellent for cold preparations and ideal for dipping bread.

Olive oil will remain at its best when stored in a cool, dark place, away from heat and light. Exposure to light and heat can affect the taste and quality of the oil.
At home, it is best to store olive oil in a kitchen cupboard, or in the fridge if you want to lower the temperature. Please note that olive oil can thicken in the fridge and sometimes appear slightly cloudy. This is completely normal; once the oil reaches room temperature, it will return to its original structure.
When buying, it is also important to pay attention to the packaging. Avoid olive oil in clear bottles, as prolonged exposure to light and heat in the store can negatively affect the quality.
