Questions about olive oil
Where does your olive oil come from?
Our olive oil comes from Spain, from the province of Jaén, specifically from the regions of Sierra de Segura and Sierra de Cazorla.
Both areas have a Protected Designation of Origin (DOP), which stands for exceptional quality and authenticity.
In addition, Señoríos de Relleu olive oil comes from the village of Relleu, in the Alicante region, about 10 km from the Mediterranean Sea.
What exactly does “extra virgin” mean?
Extra virgin means that the olive oil is pure, without chemical processing and with an acidity below 0.8%. This guarantees the highest quality and taste.
At Casa Gomez, extra virgin means more than just a quality mark. Our olive oil is pressed directly from the best olives, exclusively by cold pressing and without chemical or industrial processing. This ensures that all aromas, antioxidants and healthy fatty acids are preserved.
To earn the name “extra virgin,” the olive oil must:
- Made from 100% mechanically pressed olives (without heat or solvents).
- Have an acidity of maximum 0.8% – a sign of top quality and freshness.
- Have no taste or smell deviations and a perfect balance of bitterness, fruitiness and a light peppery touch.
What is the difference with other olive oil?
- Extra virgin → The highest quality, pure and unprocessed. Ideal for dressings, dips and to finish dishes.
- Virgin olive oil → Slightly higher acidity (up to 2%) and less pronounced flavour. Suitable for cooking, but less aromatic.
- Refined olive oil → Industrially processed, neutral in taste and often mixed with virgin olive oil. Less healthy and less tasty.
- Olive oil (without extra virgin label) → Often a mix of refined and virgin olive oil, which reduces its quality and nutritional value.
At Casa Gomez, we believe that olive oil tells a story – from the ancient trees of Jaén and Alicante to the bottle in your kitchen. That’s why we only sell genuine extra virgin olive oil, with a guaranteed origin and a taste that carries the Spanish sun.
Is your olive oil organically certified?
Yes. Our organic olive oils are all officially certified by the organic authorities in Spain. We can share these certificates upon request – please contact us.
On our website we have carefully indicated which olive oils are organically certified. If there is any ambiguity or if you have any questions, please do not hesitate to contact us. We are happy to help you!
What is the difference between your olive oil and supermarket olive oil?
We only sell extra virgin olive oil that is guaranteed to come from specific regions and meets the highest quality standards.
Unlike our olive oil, many olive oils in the supermarket are blends of oils from different countries and regions. This can lead to a less refined taste and lower quality.
Therefore, when buying in the supermarket, always pay close attention to the quality. There is an important difference between extra virgin, virgin, refined olive oil and regular olive oil.
Extra virgin → The highest quality, pure and unprocessed. Ideal for dressings, dips and to finish dishes.
Virgin olive oil → Slightly higher acidity (up to 2%) and less pronounced flavour. Suitable for cooking, but less aromatic.
Refined olive oil → Industrially processed, neutral in taste and often mixed with virgin olive oil. Less healthy and less tasty.
Olive oil (without extra virgin label) → Often a mix of refined and virgin olive oil, which reduces its quality and nutritional value.

What is really good olive oil?
Real good olive oil is extra virgin olive oil of high quality. This means that the olive oil is cold-pressed and produced without chemical processing. But how do you recognize a really good olive oil?
What should you pay attention to when buying olive oil?
- Extra virgin quality – Only olive oil with an acidity below 0.8% is extra virgin and retains all the healthy nutrients.
- Fresh and pure olives – Olive oil is a fresh product! Choose an oil with a recent production date and store it in a dark, cool place.
- Protected origin – The best olive oil comes from regions with a long tradition, such as Jaén, Sierra de Segura and Alicante .
- Dark bottle or tin – Avoid clear bottles as light and oxygen can damage the quality of the oil.
- Taste and aroma – A really good olive oil is fruity, slightly bitter and a bit peppery . These are signs of high quality and antioxidants.
Use & Storage
How long does olive oil last?
On our website and with our products we state the 'Best before' date (BBD) of our olive oil. This is an advisory date that indicates until when the optimum quality is guaranteed.
Olive oil often remains good after this date, but can slowly deteriorate in quality due to exposure to air, light and temperature. You can tell that olive oil is no longer good when it becomes rancid and develops an unpleasant odor.
Can you cook and bake with extra virgin olive oil?
Yes, you can cook and bake with extra virgin olive oil. Although all extra virgin olive oils are suitable for baking, we recommend using olive oil from mature olives. This offers a better price-quality ratio for hot preparations.
On our website we clearly indicate in the collection description whether an olive oil is better suited for cooking or ideal for cold preparations.
- Best olive oil for cooking : More affordable and perfect for frying, but also for cold dishes.
- Exclusive extra virgin olive oil for salads and dips : Excellent for cold preparations and ideal for dipping bread.
What is the best way to store olive oil?
Olive oil will remain at its best when stored in a cool, dark place, away from heat and light. Exposure to light and heat can affect the taste and quality of the oil.
At home, it is best to store olive oil in a kitchen cupboard, or in the fridge if you want to lower the temperature. Please note that olive oil can thicken in the fridge and sometimes appear slightly cloudy. This is completely normal; once the oil reaches room temperature, it will return to its original structure.
When buying, it is also important to pay attention to the packaging. Avoid olive oil in clear bottles, as prolonged exposure to light and heat in the store can negatively affect the quality.
