Ajoatao de Jaén – Authentic Spanish recipe from the Sierra de Segura
Traditional dish with extra virgin olive oil from the Sierra de Segura, Andalusia Ajoatao is a traditional dish from Jaén, originating from the mountainous region Sierra de Segura. This is one of those authentic Spanish recipes where olive oil plays the leading role. Ajoatao – also called Ajo atao (the "j" is pronounced like "h") – is a creamy puree of potato, garlic, egg yolk and extra virgin olive oil, emulsified to perfection. This recipe reminds me of my grandmother's cooking, who, whenever we were on holiday in Spain, would prepare lunch early in the morning, which always consisted of...
Esparragos verdes a la plancha (grilled green asparagus)
In my youth, during the summer holidays, we would visit my grandparents and family each year in my father's birthplace; Los Prados de Armijo. This village is nestled among olive groves and split by a valley, allowing you to take a (uphill) walk to the other side via a winding road around the valley. Walking past my uncle's goats and chickens, I vividly remember rosemary and asparagus growing wild along the roadside. Because of that memory, it might be one of my favorite vegetables that really suits almost everything. At home in the Netherlands, I unfortunately have to buy asparagus...
Garlic prawns
Gambas al ajillo (or garlic shrimp) is one of my favorite dishes from Spanish cuisine. Simple, quick, and easy to prepare with just a few ingredients. But so incredibly delicious! For this, I use Oro de Genave, a wonderful organic extra virgin olive oil that is perfect for this dish. "Extra vergine" is the Italian name for the same quality: cold-pressed oil from the first pressing. For this dish, you will need for 2 people: 200 grams of (small) raw gambas 3 cloves of garlic (more if you like!) parsley small peppers; for this dish, I bought small dried peppers...
Tomato risotto with extra virgin olive oil
Mediterranean cuisine offers many dishes. This dish comes from Italian cuisine, where beautiful extra virgin olive oils like Señorios de Relleu, Verde Segura, Saqura and Arte Oleum are perfect for finishing the dish. This dish is inspired by an Italian recipe to which I've given a slightly different twist, and it pairs well with ingredients such as shrimp or ground chicken. For this dish, for 2 people, you will need: 150 grams of risotto rice 200 grams of shrimp or ground chicken 200 grams of Heinz tomate frito 1 red bell pepper 250 grams of cherry or snack tomatoes 1...
